I responded via email, but Lyza suggested I add it to the blog since this discussion (on the wide scale — not what I have to say one it) is interesting and important. Here’s what I said:
Thanks for the link Beeman. Unfortunately there wasn’t anything new that we didn’t already know, but it is good to see it being covered more often and in mainstream media like the NYT. Maybe middle-America will start to listen. Oh wait, this was the NY Times, not Omaha Times…
Adding Lyza to the list. She swore off beef for her New Year’s reso. And I’m trying to limit beef whenever possible (last night’s Cha burrito sure was tasty though). I follow the authors philosophy that we need to eat LESS not eliminate it altogether. Lyza and I do eat a lot of pork and chicken in place of cow, so I’d like to see more about the effects of different species. One of the commenters mentioned that pigs are less efficient than cows so maybe my perceived benefit of limiting beef is in reality being offset by my increase in pork consumption. I’m going to eat a handful of flour and salt now.
